Some people just radiate an overpowering JOY - they captivate you with their mesmerising smile and win over your heart within seconds of meeting them. And when I get to work with people like this, it just makes my job that much more amazing!
Caroline and Christopher were one of those couples, the one that dreams are made of. We became friends instantly, and planning Caroline's dream cake was like planning FaceTime calls with a childhood friend - I looked forward to every time she and I would connect to work on the details for their gorgeous cake.
Their wedding was held in an impressive 17th century stone-clad Portuguese fort called Forte da Cruz, which sits right on the ocean's edge in Estoril, a seaside town just outside of Lisbon where Europe's nobility and royalty have been known to spend their summers. The view is breathtaking, and from the balcony, the ocean surrounds you, with beach, sunbathers and boats down below in every direction. A sensational feeling to be up on top watching the world go by.
It was a dreamy destination wedding, and for the cake we decided to incorporate both American and Portuguese elements. Most Americans prefer buttercream cakes, so I suggested just that. I made sugar flowers similar to the peonies in Caroline's bouquet, in tones of white and blush with accents of pale green.
In alignment with the weekend's festivities (4th of July weekend), the couple appropriately chose alternating layers of raspberry champagne cake and vanilla cake with fresh raspberries, raspberry preserves and white chocolate swiss meringue buttercream.
Oh, what a night... amazing!
